Since 2005, he has closely collaborated with Mr. Joel Robuchon and his esteemed team, including Eric Gonzalez, Eric Bouchenoire, Philippe Braun, François Benot, Tomonori Danzaki, David Alves, and Michael Michaelidis.
Thomas has played a pivotal role in the opening of restaurants in Monaco, Singapore, Bordeaux, Las Vegas, Saint Barthélémy, and Doha, earning multiple accolades from the Michelin Guide, including 2 and 3-star ratings. His culinary journey has been shaped by working alongside culinary giants such as Joel Robuchon, Raymond Blanc, Paul Bocuse, Joel Garaud, and NOBU Matsuhisa.
